| 2 | Tablespoons | butter, softened | |

| 2 | teaspoons | fresh parsley, chopped | |

| 2 | teaspoons | orange zest | |

| 1/2 | teaspoon | coriander | |
|  | |||
| 4 | (3 ounce) lamb chops | ||
|  | |||
| 1 | Tablespoon | olive oil | |
|  | |||
| 1/4 | teaspoon | salt | |
|  | |||
| 1/4 | teaspoon | pepper | |
|  | |||
In a small bowl, combine butter, parsley, orange zest and coriander; mix well.  Place butter mixture on sheet of plastic wrap; shape into log.  Wrap and refrigerate while preparing chops.  
Preheat grill.  Rub both sides of chops with oil; sprinkle with salt and pepper.  Place chops on lightly oiled grill and grill 7 to 10 minutes on medium heat, turning once or twice.  
To serve, top each lamb chop with a dollop of orange coriander butter.
